This is a very comprehensive and up to date presentation of the parasitic infections affecting the flesh (striated muscles) and the offal (viscera) of food mammals. Discussions are not limited to the morphology of the parasites and the lesions they produce but include epidemiology, diagnosis and prophylaxis of the parasitic infections of flesh and offal. In addition, in the case of the most important parasitic infections, such as toxoplasmosis, cysticercosis, trichinellosis etc., problems of physiopathology and immunology are also discussed. In Part I, which deals with parasitic infections of the flesh (striated muscles), chapters include Protozooses, Helminthoses and Entomoses. In Part II, which deals with parasitic infections of the viscera, chapters are presented according to the organs and /or tissues affected.

This remarkable publication, prepared by the distinguished and well known French parasitologist Professor Jacques Euzéby, will be a very valuable addition to the libraries of veterinarians concerned with meat inspection, and also extremely useful to those veterinary personnel, epidemiologists and biologists responsible for the laboratory diagnosis of lesions affecting animals.
